A 110 calorie muffin–and yes they are delicious!

After quite a stressful afternoon I knew baking would help relieve my stress. Looking around my kitchen to see what ingredients I had, I saw two of my favorite things, bananas and oatmeal! I came across an oatmeal banana muffin recipe and with some adjusting turned it into cinnamon, oatmeal, banana, deliciousness!

All you need for this recipe is:

1 cup rolled oats
1 cup fat free yogurt (I used light and fit vanilla yogurt–adds some flavor with no extra calories)
1/4 cup no sugar added applesauce
6 tbsp splenda– if you are in college like me that is 60 packets of splenda
1/4 cup of egg whites
1 cup flour
1/2 tsp salt
1 tsp vanilla extract
2 tsp cinnamon
1 tsp baking soda
1 cup mashed banana

Preheat the oven to 400 degrees.

First mix in a small bowl the yogurt and the oats. In another bowl mix together the flour, salt, baking soda and cinnamon.
In the bowl with the yogurt and oats, add in egg, applesauce, and sugar. Blend this together nicely.
Take the wet ingredients and mix well into the dry.
Fold in the mashed banana throughout the mix.  This is what the consistency should look like:

This makes 12 muffins. Spray a cupcake pan with non stick cooking spray and pour in the mix. Cook for 18 min.

This muffin recipe is so delicious. It is the perfect blend of fruit, spice, and oats. It is great for a quick and healthy snack or for a light breakfast. May be one of my favorite recipes I have put together in a while. I personally like to leave the mashed banana with some chunks in it to add to the density of the muffin. It is easy to do this by mashing the banana with a fork. Also you can add as little or as much cinnamon to your liking. If you have it, cloves would be a nice additional spice to this recipe.  I hope you enjoy as much as I am as we speak!
